Leading the culinary team at The Pelican Seafood Bar & Grill is Head Chef Jonathan Sparber , who brings on board his rich experience ,drive and inspiration. His latest culinary challenge to himself was taking up the role of the pioneer and consulting resident chef at Singapore’s very own Janice Wong’s 2am:lab.
He has approached each project in new and surprising ways to innovate creative culinary experiences for the guests. Jonathan was part of the reopeningof The Savoy,London and the opening of Spice Market London by Jean Georges Vongerichten.His five-year stint in Amsterdam also saw him worked in the kitchens of the Amstel Hotel’s Michelin starred LaRive, Café Toscaniniand Restaurant Vermeer .
Born in Tyrol, the heart of the Alps, Jonathan treaded on the journey to becoming a chef when quitting the commercial college and looking to challenge himself in a more creative way. “You’ll never be done with learning. That’s what makes cooking interesting.
