Raised in Marseille, France by a Spanish mother and an Italian father, Chef Jean-Philippe Patruno brings his uniquely rich and diverse heritage to the fore as the Executive Chef & General Manager of UNA at One Rochester.
Chef Patruno commenced his 22-year stay in English capital by working at the 3 Michelin-starred Chez Nico under the tutelage of legendary restaurateur Mr Nico Ladenis. During the 12 years Chef Patruno spent working with Mr Ladenis, he was asked to head operations at the award-winning Simply Nico and Very Simply Nico, both of which have matured into venerable dining institutions in the United Kingdom. Chef Patruno was then approached to run his own kitchen by restaurateurs Sam and Eddie Hart, leading to the opening of Fino in 2003.
Driven by Chef Patruno’s ability and technical fitnesse, Fino became the most talked about new gourmet destination in London. Fino’s unheralded success then led to the opening of Barrafina in 2006, another critically-acclaimed addition to the London dining scene.
Following his success at Fino and Barrafina, Chef Patruno was offered the Head Chef position at Quo Vadis in 2008. The historic dining institution received rave reviews under his studied direction; being named the Best New Restaurant of that year by the Tatler UK magazine and identified as one of the best restaurants in London by Gordon Ramsay.
In late 2012, Chef Patruno arrived in Singapore to open BOMBA Paella Bar, creating waves here with his fresh and authentic approach to cooking. He then joined One Rochester in early 2014 at the helm of UNA; a vibrant dining establishment embodying the very essence of Chef Patruno’s multi-cultural heritage and passion for great food.
